Bolts: Use all grade 8, fine thread. If you don't want to paint them, mask them.
Winch chain: Buy the strongest the place sells. Don't buy it from Eagle Hardware or Home Depot. They won't have the strongest alloy chain; it might be made in Taiwan! Go to a rigging place. In my town it's called "Arctic Wire Rope Supply". They will sell you very strong black alloy 1/2" (or bigger, although it's unnecessary) chain, also a US-made slip or grab hook.
