"taking head off" question

I apologize now if this has been answered before, but I am in the middle of taking the head off the 251 flathead 6 in my '65 PW and all the bolts are out except for one - it 's between bolt #4 and bolt #5 (in the manual diagram to tighten). Do I need to take this bolt out also to take the head off? What is this bolt for?

Also, do I have to take the hose outlet to the radiator from the head? I detached the hose, but not the "elbow" that the hose attaches to on the head. It does not leak and I don't see a reason to remove it to replace the head gasket but I wanted to make sure...
