I've got a rpm/tire diameter/trans. gear ratio/axle ratio equation on my website for just this sort of calculation....

In my case, I've found that I can run all day long in my M37 with a Cummins 4bt (2500rpm), a OD with 0.73.1 ratio), 4.89 gears, and Michelin 900r16XZL at 70mph all day long on the Interstates... Actual top end is a little higher (can hit 75mph with everything warmed up). Empty truck without trailer averages 17mpg if I keep it at 65mph. Cummins 6BT has 2500-2600rpm limit depending on model...

Given the ratios that you all have been discussing, putting a Cummins into a W300 with 4.88 and either size of tires would make a nice driver IMO...
