Use white oak rather than red oak. The white oak has tyloses (likely not spelled right) in the wood that compartmentalize the xylem tubes. This keeps fluids from getting very far in the wood. That's why wineries use white oak barrels. Red will soak up much more water and oil than white oak.
Hope this helps. The re-bed project is still a pain, but sure looks great when done. White oak will last for as long as you will need, unless you are a youngster!
