I agree on the figure-8. Knife sharpening is not very quick, so it's a good thing to do while talking to somebody or watching TV, just so as you don't slice your finger. I had a good Arkansas stone but somebody stole it and I've never replaced it. Now that I have that Grizzly grinder, I'm kind of lazy about hand-sharpening.
