Am doing something similar with an M37 but I'm making a welder/farm truck. The body is sound but there are some holes in the bed where a piece of equipment was installed. I plan to Rhino line the bed and put lights all around. Work boxes and a welder/generator go in the back with an acetylene torch and a rack to hold pipe and the like.

With the granny first gear, you should be fine with 4.89's and a healthy 230 (maybe rebuilt and bored over?). Not sure it's worth the effort to mount rear duals unless you just like the look. The stock singles will handle anything that the rest of the truck can support in the driveline and chassis.
