W series Dodge Job Rated Trucks, Service Standards section under cooling system, (this includes your truck Mark) Temperature when thermostat starts to open - 157 F to 162 F, Temperature when thermostat is fully open - 183 F to 187 F. I say this with the utmost of envy Mark, you gots way to much time on your hands! Seems to me by the manual you are running about 3 degrees hot. I don't think I'd loose sleep over it. Up here, in the winter, 210 thermostats are used to get more heat in the cab, abit hot is better than not hot enough. My worries are starting em cold and cooling down to fast. I seem to blow up clutches plowin snow alittle to often also. I think that's operator error though and not the Dodge.
