The wonder of carbs is that they mix a proper ratio, no matter what the airflow. Otherwise they would only work at one throttle setting. Like idle OR full throttle. Carbs work so well, they were in production for 100 years before injection was perfected.It took computers to get the mix right, something that is simple for a crb. Remember that the early injection systems were full race only- didn't work well enough for the street.

I'd bolt the holley on, see how it runs- pretty good I bet. Though it may seem to run lean, these old flat heads have so much surface area to the combustion chamber for the gas to condense out on that you might have to add more to make up for it. This is why thermostats are a good idea- fuel vaporization for better economy.
