I wish I had your problem!
based on what I saw I would be inclined to keep the 318 and the 440 and to put your 383 up for sale because I would think it would bring you a good buck
The reason I say that is that since you will have invested the $$ to repaint the two trucks I would think they would be the nicest ones
I have a 69 D100 custom with a 318 LA with a 3 speed and that's all I have
