Message:   ...but if the issue is just the ability to properly rotate the distributor (is it a new Mopar Distributor that is pinned or locked on number 1 from the factory?) then you can re-install it in any orientation as long as the rotor remains aimed at the number 1 wire hole.

The carb may need a jet change, remember that those adjusting screws are air not fuel.
I was really impressed with the new Edelbrock that we put on FrankyB's Poly, it was almost perfect out of the box, just a tad bit of fine tuning was required.
The displacement size of a motor is more important than cam design for the proper sizing of the carb. The 750 will work, but it's a monster carb with plenty of power for drag racing, not real practical for fuel economy.
I'd be willing to bet that a Poly can beat that 360 and give better fuel economy. So get her running so we can find out
